This glorious stack of pancakes. I can't get over it. It was meant to be a quick snap-and-eat photo as I had a hungry brother and sister to serve and I wanted the pancakes fresh and warm from the pan. But then everything came out perfect in this set of film and it is completely well deserving to be on my blog. I dreamt of these pancakes the night before falling asleep. I had a wicked idea of rolling up the gula melaka into tiny balls and studding each pancake with them and as they cook, the sugar melts, oozes and seeps into the fluffy pancake; giving it sweetness and some syrup-y goodness. Kinda like Ondeh-Ondeh, except better in my humble opinion.
I won't be posting my recipe for this stack of perfect fluffy pancakes though, I'm truly sorry. Just because I've probably searched high and low before I finally got it in my possession and with a few personal tweaks here and there, I honestly no longer have to go to a café or Mcdonald's for some hot cakes. For sure, this pancake recipe has far more ingredients than a regular pancake recipe. For instance, honey, crème fraîche, lemon juice and grapeseed oil but it yields the best stack ever.
I found some honey passionfruits and regular passionfruits at the grocers the other day as well and for the longest time I've wanted to do something with them and I'm glad I finally got down to it. I made a passionfruit and ginger sauce; tangy, sweet, pulpy, hints of spicyness and of course that fabulous zing!
This combination was perfect. Full Stop.
I have many precious recipes. But this is probably one of my most prized recipe.
